Queijada de Sintra XL

Instead of leaving the house to buy a package of the famous Queijadas of Sintra, why not make it a family team event and, in a fast and funny way, bake the famous pastry Queijada de Sintra in XL format?

Divide tasks by two groups, one takes care of the dough and another of the filling.

Pasta:

1 egg
1 pinch of fine salt
350g unleavened wheat flour
75 g butter

Filling:

6 small fresh cheeses
4 gems
350g of brown sugar
3 tablespoons unleavened wheat flour
2 tablespoons cinnamon (coffee)

Preparation of Queijada de Sintra

Heat the oven to 200ºC.

Pasta:

In a cup, knead with flour, salt, and butter. Add the egg and continue to knead.

After a homogeneous mixture, wrap in foil and take to the refrigerator for 1 h, roll out the dough, preferably over a stone table, previously sprinkled with flour.

Spread the dough until it has a thin thickness (2mm), and then line the dough in a pie dish.

Filling:

Crush the fresh cheeses into a bowl, adding sugar, egg yolks and cinnamon.

Add the flour and wrap until a homogeneous mixture is obtained.

Put the filling over the pie dish with the dough and bake for about 60 ‘.

After about 30 minutes reduce the oven temperature to 180 ° C.

Let it cool and then you can unmold your Queijada de Sintra XL.
